Current Research on Oats There have been a number of research studies performed to evaluate the safety of oat consumption. Many of them report that components in oat proteins cause inflammation and elicit damage in patients with gluten sensitivity. Most recently, a study published in the European Journal of Nutrition found that some forms of oat protein triggered and antibody reaction. Another study published in the Scandinavian Journal of Gastroenterology found two varieties of oat proteins were responsible for increased intraepithelial T-cell density and IFN-γ production (both of these are signs of increased inflammation). In 2012 a research study was published identifying a... direct correlation of the immunogenicity of the different oat varieties with the toxicity of peptides present in their avenin sequences. In plain English please - Proteins in oat cereal stimulated an immune response similar to what is seen from wheat. The studies above were all published after Jan. of 2011. In medicine, it can take 20-30 years for new information to become common knowledge among doctors. So I don't expect that many physicians will be talking about the potential for oat to be a problem for those with gluten sensitivity. That being said, let's take a look at a comprehensive review of the medical literature that was published in 2011 compiling 75 studies published on the topic since 1953. The summary from the authors are quoted below: Oats in a gluten-free diet increase the diet's nutritional value, but their use remains controversial. Contamination with prolamins of other cereals is frequent, and some clinical and experimental studies support the view that a subgroup of celiac patients may be intolerant to pure oats. Thus, this issue is more complex than previously suggested. In order to produce oats that are safe for all celiac patients, the following topics should be addressed: selection of oat cultivars with low avenin content, research on such recombinant varieties of oats, development of assay methods to detect avenins in oat products, guidelines for the agricultural processing of oats and the manufacture of oat products, as well as guidelines for following up with celiac patients who consume oats. And many vital reactions wouldn’t occur. For example… Copper is needed to absorb iron and release iron from storage when it’s needed. It also helps iron bond to red blood cells to prevent anemia. And iron-bound red blood cells then carry oxygen throughout your body, which is necessary to make energy. Copper is also a co-factor for energy-producing enzymes, which is another way in which copper is involved in producing energy. This explains why most of the copper in your body is found in tissues that have high energy demands, such as skeletal muscle and heart tissue. Copper is needed to build collagen, the most abundant protein in your body. It’s a structural component of your skin, bone, blood vessels, and more. Your body produces an enzyme known as superoxide dismutase (SOD). It’s a powerful antioxidant that protects your cells from damage. And copper is a co-factor of SOD, which means SOD needs copper to successfully do its job. Water scientist and biomedical engineer Gerald Pollack shares new information and ideas about simple things we can do to charge up our human cells faster than our cell phones. The report from his lab will surprise you. Dr. Gerald Pollack is a professor at the University of Washington. Dr. Pollack’s research investigates biological motion and cell biology. His curiosity was piqued when he dissected a muscle cell and noticed the interior water did not run out, but stayed in place. Why was that? This led to his 1990 book, Muscles and Molecules: Uncovering the Principles of Biological Motion, winning an “Excellence Award” from the Society for Technical Communication. His 2001 book, Cells, Gels and the Engines of Life, and his newest book, The Fourth Phase of Water: Beyond Solid, Liquid, and Vapor won that Society’s “Distinguished Award.” He is founding editor-in-chief of the journal, WATER, convener of the Annual Conference on the Physics, Chemistry and Biology of Water, and executive director of the Institute for Venture Science. He won the 2015 Brandlaureate Award, previously bestowed on Nelson Mandela and Steve Jobs. In 2016, he was awarded the first international Emoto Peace Prize. Does water have a fourth phase, beyond solid, liquid and vapor? University of Washington Bioengineering Professor Gerald Pollack answers this question, and intrigues us to consider the implications of this finding. Not all water is H2O, a radical departure from what you may have learned from textbooks. Pollack received his PhD in biomedical engineering from the University of Pennsylvania in 1968. He then joined the University of Washington faculty and is now professor of Bioengineering. His interests have ranged broadly, from biological motion and cell biology to the interaction of biological surfaces with aqueous solutions. His 1990 book, Muscles and Molecules: Uncovering the Principles of Biological Motion, won an "Excellence Award" from the Society for Technical Communication; his more recent book, Cells, Gels and the Engines of Life, won that Society's "Distinguished Award." Pollack received an honorary doctorate in 2002 from Ural State University in Ekaterinburg, Russia, and was more recently named an Honorary Professor of the Russian Academy of Sciences. He received the Biomedical Engineering Society's Distinguished Lecturer Award in 2002. In 2008, he was the faculty member selected by the University of Washington faculty to receive their highest annual distinction: the Faculty Lecturer Award. Pollack is a Founding Fellow of the American Institute of Medical and Biological Engineering and a Fellow of both the American Heart Association and the Biomedical Engineering Society. He is also Founding Editor-in-Chief of the journal, WATER, and has recently received an NIH Transformative R01 Award. He was the 2012 recipient of the Prigogine Medal and in 2013 published his new book: The Fourth Phase of Water: Beyond Solid, Liquid, and Vapor. In the spirit of ideas worth spreading, TEDx is a program of local, self-organized events that bring people together to share a TED-like experience. At a TEDx event, TEDTalks video and live speakers combine to spark deep discussion and connection in a small group.
